750 gram mutton (medium size pieces)

3 medium onions (finely chopped)

2 medium tomatoes (puree ya finely chopped)

3 tbsp oil ya ghee

1½ tbsp ginger garlic paste

1/2 cup fresh curd (well beaten)

Salt taste ke hisaab se

2 cups pani (required ho to adjust karein)

Fresh coriander leaves

Dry Spices

1 tsp red chilli powder

1/2 tsp turmeric powder

2 tsp coriander powder

1 tsp cumin powder

Whole Spices

2 bay leaves

1 inch cinnamon stick

3 green cardamom

5–6 black peppercorns

1/2 tsp cumin seeds

Finishing

1 tsp garam masala

How to Make Mutton Masala (Step-by-Step Method)

1) Sabse pehle mutton ko achhe se wash karke side me rakh dein. Thoda namak aur haldi laga kar 20–30 minute ke liye rest dena better taste ke liye achha hota hai.

2) Ek heavy bottom kadhai ya pressure cooker me oil ya ghee garam karein. Oil medium hot ho jaaye to cumin seeds aur saare whole spices daal dein. Masalon ki khushboo aane lagegi.

3) Ab chopped onions add karein aur medium flame par bhunein jab tak onion deep golden brown na ho jaaye. Onion jitni achhi bhuni hogi, gravy utni hi thick aur flavorful banegi.

4) Onion brown ho jaaye to ginger garlic paste daal kar 1–2 minute bhunein, jab tak raw smell poori tarah khatam na ho jaye.

5) Ab tomato puree daal kar masala tab tak pakayein jab tak oil clearly side se chhodne lage. Yeh step mutton masala ke base ke liye bahut important hai.

6) Is stage par red chilli powder, turmeric powder, coriander powder, cumin powder aur salt daal kar mix karein. Flame low-medium rakhein aur masalon ko 2–3 minute bhunne dein.

7) Ab beaten curd dheere-dheere daal kar lagataar mix karte rahein taaki curd phate nahi. Isse gravy smooth aur rich ho jaati hai.

8) Ab mutton pieces add karein aur masale ke sath achhe se mix karein. Mutton ko 6–8 minute tak bhunne dein taaki masala meat ke andar tak absorb ho jaye.

9) Ab pani add karein aur mix karein. Pressure cooker me bana rahe ho to 5–6 whistles tak pakayein. Open kadhai me bana rahe ho to dhak kar low flame par 60–75 minute tak pakayein.

10) Jab mutton soft ho jaaye aur gravy thick ho jaye, tab garam masala aur fresh coriander leaves daal kar gas band kar dein. Curry ko 5 minute rest dena flavour ko aur better bana deta hai.
