Yeh recipe zyada spicy nahi hoti, balki isme masalon ka balanced aur fragrant taste hota hai. Long cooking process ki wajah se mutton soft ho jata hai aur gravy ka flavour meat ke andar tak chala jata hai.

Ingredients (Samagri)

750 gram mutton (bone-in, medium pieces)

3 tbsp mustard oil (preferred)

2 medium onions (finely chopped)

1 cup fresh curd (well beaten)

Salt taste ke hisaab se

2 cups pani (as required)

Whole Spices

2 bay leaves

1 inch cinnamon stick

4 green cardamom

6–8 black peppercorns

2 cloves

Dry Spices

1 tsp Kashmiri red chilli powder (color ke liye)

1/2 tsp turmeric powder

1 tsp fennel powder (saunf)

1 tsp dry ginger powder (sonth)

1/2 tsp garam masala

Garnish

Fresh coriander leaves (optional)

How to Make Mutton Rogan Josh (Step-by-Step Method)

Sabse pehle mutton ko achhe se wash kar lein. Thoda namak laga kar 15–20 minute rest dena optional hai, lekin taste ke liye achha hota hai.

Ek heavy bottom kadhai ya pressure cooker me mustard oil ko smoking point tak garam karein. Gas band karke thoda thanda hone dein, phir medium flame par wapas garam karein.

Oil me bay leaves, cinnamon, cardamom, cloves aur peppercorns add karein. Jab khushboo aane lage, tab chopped onions daal dein.

Onions ko medium flame par bhunein jab tak woh light brown na ho jaayein. Zyada dark mat karein, warna gravy ka taste badal sakta hai.

Ab mutton pieces add karein aur high flame par 6–7 minute tak bhunein taaki mutton properly seal ho jaaye.

Flame low kar dein aur beaten curd dheere-dheere add karein. Lagataar mix karte rahein taaki curd phate nahi.

Ab Kashmiri red chilli powder, turmeric, fennel powder aur dry ginger powder add karein. Masale ko 2–3 minute low flame par bhunne dein.

Pani add karein, mix karein aur kadhai ko dhak kar low flame par pakne dein. Pressure cooker me bana rahe ho to 5–6 whistles tak pakayein.

Open pan me bana rahe ho to 60–75 minute slow cooking karein, beech-beech me gravy check karte rahein.

Jab mutton soft ho jaaye aur gravy oil chhodne lage, tab garam masala add karein aur gas band kar dein. Curry ko 5 minute rest den.
