Salt taste ke hisaab se

Fresh coriander leaves

1/4 tsp garam masala

1 tbsp milk (eggs soft rakhne ke liye)

How to Make Egg Bhurji (Step-by-Step Method)

1) Sabse pehle ek bowl me eggs tod kar daal dein. Thoda namak aur agar chaaho to 1 tbsp milk add karke fork se achhe se beat kar lein. Isse bhurji soft banegi.

2) Ek pan me oil ya butter medium flame par garam karein. Oil garam ho jaaye to chopped onions add karein.

3) Onions ko medium flame par bhunein jab tak woh soft aur halka golden na ho jaayein. Onion achhe se pakni chahiye, par jalni nahi chahiye.

4) Ab green chilli add karein aur 30 seconds bhunein. Iske baad chopped tomatoes daal dein.

5) Tomatoes ko pakayein jab tak woh soft ho jaayein aur oil halka sa side chhodne lage. Yahin se bhurji ka base tayaar hota hai.

6) Ab turmeric powder, red chilli powder, coriander powder aur salt add karke masale ko 1 minute tak bhunne dein.

7) Ab beaten eggs pan me daal dein aur flame low kar dein. Thode seconds ruk kar spatula se dheere-dheere mix karna start karein.

8) Eggs ko continuously stir karte rahein taaki woh scramble ho jaayein aur lumps na banein. Eggs ko zyada overcook na karein, warna bhurji dry ho sakti hai.

9) Jab eggs almost cook ho jaayein, tab garam masala (agar use kar rahe ho) aur fresh coriander leaves daal dein.

10) Gas band karke bhurji ko 1 minute rest den. Isse flavours achhe se settle ho jaate hain.
