Ingredients (Samagri)

Batter ke liye

1 cup besan (gram flour)

1/2 cup curd

1/2 cup pani (as required)

1 tsp sugar

Salt taste ke hisaab se

1/2 tsp turmeric powder

1 tsp eno fruit salt (ya baking soda)

Tadka ke liye

1 tbsp oil

1 tsp mustard seeds

8–10 curry leaves

2 green chillies (slit)

1/2 cup pani

1 tsp sugar

Garnish

Fresh coriander leaves

Grated coconut (optional)

How to Make Dhokla (Step-by-Step Method)

1) Ek bowl me besan, curd, salt, sugar aur turmeric powder daal kar achhe se mix karein. Thoda-thoda pani daal kar smooth, lump-free batter bana lein. Batter zyada thick ya zyada patla nahi hona chahiye.

2) Batter ko 10–15 minute rest den. Isse besan properly set ho jaata hai.

3) Steamer me pani garam hone ke liye rakh dein. Steaming plate ya tin ko halka sa oil laga kar ready rakhein.

4) Batter me eno add karein aur turant halka sa mix karein. Batter thoda fluffy ho jayega.

5) Turant batter ko greased plate me daal dein aur steamer me rakh kar medium flame par 15–18 minute steam karein.

6) Toothpick ya knife daal kar check karein. Agar clean nikal aaye, to dhokla ready hai. Plate ko bahar nikaal kar thoda thanda hone dein.

7) Ab tadka ke liye ek pan me oil garam karein. Mustard seeds daal dein. Jab rai chatakne lage, curry leaves aur green chillies add karein.

8) Isme pani aur sugar daal kar 1 minute ubalne dein. Gas band kar dein aur yeh tadka dhokla ke upar evenly daal dein.

9) Dhokla ko pieces me kaat kar fresh coriander aur coconut se garnish karein.
