Ingredients (Samagri)

500 gram fish (rohu, katla, pomfret ya koi bhi fresh fish)

2 medium onions (finely chopped)

2 medium tomatoes (puree ya finely chopped)

2 tbsp oil (mustard oil preferred)

1 tbsp ginger garlic paste

1/2 tsp turmeric powder

1 tsp red chilli powder

1 tsp coriander powder

Salt taste ke hisaab se

1½ cup pani (required ho to adjust karein)

Fresh coriander leaves

Whole Spices (Optional)

1 bay leaf

1/2 tsp cumin seeds

How to Make Fish Curry (Step-by-Step Method)

1) Sabse pehle fish pieces ko achhe se wash kar lein aur unme thoda namak aur haldi laga kar 10–15 minute ke liye side me rakh dein. Isse fish ka raw smell kam hota hai.

2) Ek pan me 1 tbsp oil garam karein aur fish pieces ko halkasa shallow fry kar lein. Fish ko fully cook nahi karna hai, bas halka sa colour aane tak fry karein. Fish nikal kar side me rakh dein.

3) Ab usi pan me thoda aur oil add karein. Oil garam ho jaaye to cumin seeds aur bay leaf daal dein. Khushboo aane lage to chopped onions add karein.

4) Onion ko medium flame par bhunein jab tak woh light golden brown na ho jaaye. Onion achhi tarah bhuni hogi to curry ka base strong banega.

5) Ab ginger garlic paste daal kar 1–2 minute bhunein jab tak raw smell khatam na ho jaye.

6) Iske baad tomato puree add karein aur masala tab tak pakayein jab tak oil side se chhodna start na kar de. Thoda patience yahan bahut important hota hai.

7) Ab turmeric powder, red chilli powder, coriander powder aur salt daal kar mix karein. Masale ko low flame par 2 minute bhunne dein.

8) Ab pani add karein aur gravy ko ubaal aane dein. Gravy na zyada thick honi chahiye, na zyada patli.

9) Jab gravy me achha boil aa jaye, tab fried fish pieces dheere se daal dein. Pan ko halka sa hila kar mix karein, chamcha zyada mat chalayein taaki fish na tute.

10) Curry ko medium flame par 7–10 minute tak pakne dein. Fish achhe se gravy ke flavours absorb kar legi.

11) Last me fresh coriander leaves daal kar gas band kar dein.
