Ingredients (Samagri)

Dough ke liye

2 cup maida

4 tbsp oil ya ghee

Salt taste ke hisaab se

Pani (tight dough ke liye)

Filling ke liye

1/2 cup moong dal (soaked 3–4 hours)

1 tsp fennel seeds (saunf)

1 tsp cumin seeds

1 tsp coriander powder

1/2 tsp red chilli powder

1/2 tsp garam masala

1/2 tsp amchur (dry mango powder)

Salt taste ke hisaab se

2 tbsp oil

Frying ke liye

Oil (deep frying)

How to Make Kachori (Step-by-Step Method)

1) Sabse pehle dough tayaar karein. Ek bowl me maida, salt aur oil daal kar achhe se mix karein. Ungliyon se rub karke crumbly texture bana lein. Ab thoda-thoda pani daal kar tight dough gundh lein. Dough ko cover karke 20–30 minute rest den.

2) Filling ke liye soaked moong dal ka pani nikal kar coarse paste bana lein. Dal ko bilkul smooth mat peesna.

3) Ek pan me 2 tbsp oil garam karein. Isme cumin seeds aur saunf add karein. Jab khushboo aane lage, tab moong dal ka paste daal dein.

4) Dal ko low flame par lagataar chalate hue pakayein jab tak woh dry aur crumbly na ho jaaye.

5) Ab coriander powder, red chilli powder, garam masala, amchur aur salt add karke 2–3 minute aur bhunein. Gas band karke filling ko thanda hone dein.

6) Rest ki hui dough ko chhote balls me divide karein. Har ball ko halka sa flatten karein.

7) Beech me 1–2 spoon filling rakhein aur edges ko fold karke achhe se seal karein. Halki si flat kachori bana lein.

8) Ek kadhai me oil medium-low flame par garam karein. Oil zyada garam nahi hona chahiye.

9) Kachoriyon ko dheere-dheere oil me daal kar low flame par fry karein. Beech-beech me palte jab tak kachori golden brown aur crispy na ho jaaye.

10) Fry hone ke baad kachoriyon ko tissue paper par nikaal lein.
