Ingredients (Samagri)

Dal ke liye

1 cup whole black urad dal (sabut urad)

1/4 cup rajma

Salt taste ke hisaab se

4–5 cups pani

Gravy ke liye

2 tbsp butter

1 tbsp oil

1 medium onion (finely chopped)

2 medium tomatoes (puree)

1 tbsp ginger garlic paste

1/2 tsp turmeric powder

1 tsp red chilli powder

1 tsp coriander powder

1/2 tsp garam masala

Finishing

2–3 tbsp fresh cream

1 tbsp butter

Fresh coriander leaves

How to Make Dal Makhani (Step-by-Step Method)

1) Sabse pehle urad dal aur rajma ko achhe se wash karke 8–10 hours ya overnight pani me bhigo dein.

2) Bhigi hui dal aur rajma ko pressure cooker me salt aur pani ke sath 6–7 whistles tak pakayein, jab tak dal bilkul soft na ho jaye.

3) Cooker khulne ke baad dal ko halka sa mash kar lein aur low flame par side me rakh dein.

4) Ek heavy bottom pan me oil aur butter garam karein. Isme chopped onion daal kar golden brown hone tak bhunein.

5) Ab ginger garlic paste add karke 1–2 minute bhunein, jab tak raw smell khatam na ho jaye.

6) Tomato puree add karein aur masala tab tak pakayein jab tak oil clearly side se chhodne lage.

7) Ab turmeric powder, red chilli powder aur coriander powder daal kar masale ko low flame par 2 minute bhunne dein.

8) Cooked dal ko is masale me add karein aur achhe se mix karein. Flame low rakhein aur dal ko 20–30 minute tak dheere-dheere pakne dein. Beech-beech me chalate rahein.

9) Dal thick aur creamy ho jaaye to garam masala, fresh cream aur butter add karein. Achhe se mix karein.

10) Gas band karke dal ko 5 minute rest den. Upar se fresh coriander se garnish karein.
