 Khandvi ek traditional Gujarati snack hai jo apni soft, melt-in-mouth texture aur light flavour ke liye famous hai. Ye dish besan aur curd se banayi jaati hai aur iske upar mustard seeds aur curry leaves ka simple tadka diya jata hai. Khandvi healthy bhi hoti hai kyunki ise fry nahi kiya jata, balki cook aur roll kiya jata hai.

Ingredients (Samagri)

Batter ke liye

1 cup besan (gram flour)

1 cup fresh curd

2 cup water

1/2 tsp turmeric powder

Salt taste ke hisaab se

Tadka ke liye

1 tbsp oil

1 tsp mustard seeds

5–6 curry leaves

2 green chillies (optional)

Garnish ke liye

2 tbsp grated coconut

2 tbsp chopped coriander leaves

Step 1: Batter Preparation

Sabse pehle ek bowl me besan aur curd daal kar achhe se mix karein. Isme water, turmeric powder aur salt add karein. Batter ko whisk karein jab tak smooth consistency na mil jaye. Batter me lumps nahi hone chahiye.

Step 2: Batter Cooking

Ab ek non-stick pan me prepared batter daalein aur low-medium flame par cook karein. Batter ko continuously stir karte rahein taaki lumps na bane.

Kuch minute baad batter thick hone lagega. Jab batter smooth aur thick paste jaisa ho jaye, tab gas band karein.


Step 3: Batter Spread Karna

Ab turant cooked batter ko flat surface jaise steel plate, tray ya kitchen counter par thin layer me spread karein. Is step me speed important hai, kyunki batter jaldi set ho jata hai.

Batter ko evenly spread karein aur 5–10 minute thanda hone dein.

Step 4: Rolling Process

Jab batter thanda ho jaye, tab knife se long strips cut karein. Har strip ko carefully roll karein aur plate me arrange karein.


Step 5: Tadka Preparation

Ek small pan me oil garam karein. Isme mustard seeds add karein. Jab seeds crackle hone lage, tab curry leaves aur green chillies add karein.

Is tadka ko rolled khandvi ke upar evenly daal dein.
